Take a look at this great article written by Larry Rea in the March 14, 2006 Outdoor section of the Commercial Appeal, about Vicki Patterson and her great tasting, easy to prepare Duck.

FINALLY, THERE’S A SEASON FOR ALL SEASONS

There’s good news for all you avid duck hunters who don’t like to eat duck.
No longer will you complain about the taste or the texture or the way it has been cooked.
Thanks to the partnership of Champion of Champion duck caller Buck Gardner and master chef Vicki ‘The Duck Lady’ Patterson of Hagerman, Idaho, your problems have been solved.
It’s all about seasonings.
Thus, was born Champion’s Choice Seasonings and Batter (suggested retail $5.99 for seasons, $3.99 for batter and $34.99 for gift set with I Can’t Believe It’s Duck cookbook).
Gardner, president of Buck Gardner Calls based in Memphis, Tenn., said it only logical that Patterson join his team “because she knew what she was doing with duck and seasonings.”
All of which is what makes this such a solid product, one that brings the hunter, the duck and the cook together.
You don’t even have to use salt with any of the four seasonings available.
“We say season it, don’t salt it,” said Patterson, who owns a catering business in an area that, besides being a high-volume tourist destination about 90 minutes from Idaho’s Sun Valley ski resort, is also a major stopping point for migrating ducks. “All of our spices contain just enough tenderizer, and are low in salt and contain no MSG, very important to many of us.”
In other words, you’ll love all the flavors and use them in all your recipes.
Champion’s Choice Seasonings and Batter come in Garlic Parmesan, Jamaican Jerk, Smokey Mountain and Buck’s Basic Batter and Breading.
Here’s a brief description of each seasoning:

Garlic Parmesan – This unique blend of herbs, basil, garlic and cheese has an intense, rich and delicate flavor that tenderizes and enhances at the same time. Use it in a marinade, vegetables, on any game meat, poultry, beef or fish. Use your imagination.

Jamaican Jerk – This seasoning is a sweet zesty, seasoning with a hint of heat that will have your taste buds, pardon the pun, “Quackin!” It wakes up that lazy duck, seafood, beef, pork and salad, along with anything else you choose to put it with. Chicken will never be the same again.

Smokey Mountain – Savory herbs and spices go into this flavor sensation that will have you thinking campfire in the woods on a cool autumn night. It’s the rich combination of roasted bell peppers, onion and garlic along with other secret spices of smoke and heat that are combined in any dish you choose to pair with it.

Buck’s Basic Batter & Breading – There really is no substitute for the distinctive flavor in this Batter/Breading. It is lightly seasoned and can be used in limitless ways. The seasonings that go into this flavorful combination are high quality to enhance all your battered and breaded meats and vegetables. It works whether you are baking a breaded duck, chicken or seafood entree or frying battered vegetables or meats for a hearty snack.
